Zesty Mexican Beef and Rice

pound ground beef or turkey

cup corn (optional)

cup chopped tomato (optional)
- In large skillet, cook 1 lb. ground beef or turkey until no longer pink; drain.
- Stir in rice-pasta mix, 2 Tbsp. margarine, 2 1/4 cups water and Special Seasonings; bring to a boil.
- Cover, reduce heat to low and simmer 15-20 min. or until rice is tender. Let stand 3 minutes before serving.
- Add 1/2 cup corn during last 5 min. of simmering. Sprinkle with 1/2 cup chopped tomato before stand time.
