Chicken Fried Rice (Family Size)
package RICE-A-RONI® Fried Rice (Family Size)
pound uncooked, boneless, skinless chicken breasts, cut into 1-inch pieces
cup margarine or butter
cups frozen peas (optional)
- In large skillet, sauté rice-vermicelli mix with 1/4 cup margarine over medium heat until vermicelli is golden brown, stirring frequently.
- Slowly stir in 3 1/4 cups water, Special Seasonings and 1 1/2 lb. uncooked, boneless, skinless chicken breasts, cut into 1-inch pieces; bring to a boil.
- Cover, reduce heat to low and simmer 20-25 min. or until rice is tender and water is absorbed.
- Increase heat to medium; add 4 beaten eggs to skillet. Cook and stir until eggs are set, about 2 min.
- Add 1 1/2 cup frozen peas during last 5 min. of simmering.
